My mom has a thyroid condition (hypothyroidism) how often should she be seeing her doctor?

Depends: Patients who are feeling well and have been on a stable dose of thyroid hormone for a number of years, only need to be seen once yearly. More frequent visits would be needed if she has symptoms, fluctuating thyroid levels, or fluctuating dosages of thyroid hormone.
