CanYouTake The Heat?: It's the AMOUNT of heat. Unless you eat sushi, some amount of heat must be used to cook the fish. Baking, broiling or sauteing can use less heat than frying, thus less of the Omega-3 is "lost." It's even been shown that frying can completely alter the fat profile of a (small) fish and canning destroys most of it too. Don't eat just any ol' fish raw, however. You have to find "sushi grade."
