Possible: Coughing as an allergic reaction to gluten is a rare but reported symptom. So, yes you can possibly have Celiac disease, but it needs a total work-up to be a confirmed diagnosis. I'm unable to guess confidently about what UC means, but if it is uterine cancer - your healthcare ought to be carefully coordinated. Don't self-Dx or make major changes w/o advice and consent from the team. Best wishes!

Dry mouth?: If the cough is associated with eating dry food, then you may just be lacking saliva. Trying eating them with a liquid. It is not a sign of celiac disease.
