Do drugs like zoloft (sertraline) and olanzapine work on the parasympathetic nervous system and that's what calms you down ?

No.: The parasympathetic nervous system does not "calm you down." These drugs work at the cortical and subcortical levels. Any affective influences of the autonomic nervous system are secondary to the physiological effects.
