Biggest drivers of pancreatitis & elevated liver function enzymes in US are high blood triglyceride concentrations & steatosis (fat infiltration throughout liver), both driven by low fat diet, high carb/sugar foods. While alcohol (fermented sugars) has long been more commonly recognized, actually carbs in general, especially simple carbs as significant part of greater food issues
