Bowel contents: Eating before a liver ultrasound can increase food/gas content in your intestines which could interfere with the images.

Gallbladder : When they do an ultrasound of your liver they also look at the gallbladder. Fasting helps ensure that the gallbladder is full and easier to evaluate on US.
