Hep B Series Finish: If you know that you had one Hep B vaccine in the past, then you only need to take the #2 shot, and then the final or third shot five months later. There is no indication to start the entire series again. That said, there is also no harm in restarting the entire series should you personally believe it is important for your peace of mind.

Hepatitis B vaccine: The ACIP, a part of the Center for Disease Control, recommends three doses of hepatitis B to be given at 0, 1 and 6 months. You should ask your doctor to give you the last two doses (2 months apart), if you are sure you got the first one. Request a blood test to check the hepatitis B surface antibody test one month after the last dose. This can assure you the vaccinations worked.

Hep B: If immunity is uncertain I would recommend starting the series again, it will not cause harm and will assure immunity. This would be important especially if you will be at risk for exposure.
