Minimal risk: Food-borne illnesses, by definition, are diseases spread by eating contaminated foods. Any direct contact with the contaminated food could, technically, cause illness through a break in the skin, but this route of transmission has a very low risk of actually happening. I would be careful handling any fresh meats without hand washing before and after handling to be safe.
