Yes: it can lead urine and stool to look that color. the reason it went right through you is it was too much acidity for your stomach and it did not get digested well. If you continue to have diarrhea, then you should see your primary care doc as infection should be ruled out too

Probably: I definitely wouldn't put it past salsa to turn your excrements orange and red. Has this happened to you before? Was it a new kind of salsa for you? I'd say if it stops soon and you're not having other symptoms like burning when you urinate or obvious blood then it should get out of your system within a couple days and you'll be fine. If you are having other symptoms, maybe get checked out.
