Lipid transport: Hi. Lipoprotein particles exist to transport water-insoluble lipids in the blood, a water-based medium. You know oil and water don't mix. Lipoprotein particles have polar lipids (phospholipids, free cholesterol) and polar proteins on the surface in contact with the blood plasma (water). The interior of the lipoprotein particles is hydrophobic and is where triglycerides & cholesterol esters reside.
