Gluten Senstivity: You are likely to have gluten sensitivity (this is why you can't eat bread). Because of the inflammation caused by the bread and gluten you are not absorbing so that is why you are loosing weight. Being that you BMI is 40 it would be recommended that you lose weight by avoiding all bread, pasta, flour, cereal, oatmeal, beer, etc. You will actually feel lighter and have more energy.
