Is it possible that if you've got several enlarged lymph nodes and biopsy 1, the node that's biopsied may show nothing but another node might?

Probably not: Biopsy the biggest one if they're all reasonably similar, and if there's no cancer, sarcoid, or other obvious disease, the chance that an additional biopsy will give information that will be helpful is very low.
