Pasta/oil/cheese?: I am a vegetarian and have difficulty not gaining weight. I think the culprits are cheese and cream in my case. If you are vegan then watch how many carbohydrates, like bread and pasta you eat, and monitor how much oil is in your food. Best wishes.

Weight gain diet: First eat healthy. At least 5 servings of fruits and vegetables a day. Lots of grains, nuts, cereals. You are in the fortunate situation where you can eat a lot of foods that most have to avoid like ice cream and milk shakes (very high sources of calories and fat). Starches too are fine for you: potatoes and pasta. Eat at least 4 ounces of meat or fish daily.

Quantity: Gain or loss of weight has nothing to do with raw or cooked foods. It is only a matter of the amount of calories you intake in a day. Cooking food was started to disinfect the food even though some vitamins and minerals may suffer degradation.

Why?: Trying to gain weight is not a good idea. If you are otherwise healthy, being skinny is not a disease. Soon enough you will start gaining weight and will look back fondly at this time when you could eat anything without gaining weight.
