Yes, trial it first: Alcohol absorption or metabolism is not affected by the absence of the gallbladder. The liver should be able to handle moderate amounts of alcohol. However since bile, which would have once been stored in the gallbladder and release after meals, is now constantly expelled into the GI tract, you may find that the combination with alcohol may change your bowel habits and/or lead to some heartburn.
