Higher than cooked: Cooking destroys many disease causing micro-organisms so your chances are higher with raw beef than cooked. Cooking does not destroy some toxins associated with food-poisoning so if the beef was not properly processed and refrigerated prior to cooking, so it's not 100%. Grassfed implies the cow was not crowded in a feedlot but even that may be misleading. Buyer beware!
