Atrial fib??: I'd like to know your definition of a sensible drink. If you mean coffee or tea or anything with caffeine that is not a good choice. I trust you are on medication for a fib. Your alcohol intake as you indicated is too much alcohol and you may experience the heart effects within about 1-2 hours depending on how much alcohol you drank and when you ate last. If not on medication be very careful.

Afib: It can occur immediately or delayed. Some patients are very susceptible to alcohol and develop episodes of afib quite quickly after a couple of drinks . Others seem to have more resistance to develop episodes with alcohol ingestion. I will say is patient dependent. There are many other reasons to develop episodes, i tend to screen for sleep apnea as is a treatable condition.
