I'm gluten-intolerant, so if i don't eat any wheat during my pregnancy is there a higher chance my baby will be normal?

Not likely: Gluten intolerance causes you to avoid nutritious foods which you will have to subsitute to remain healthy. Your health is a good predictor of health of baby but there are so many factors besides gluten that influences your baby's health.
