If indeed your: Heart that is palpitating, there are a number of dysrhythmias both benign and dangerous that could be the cause. Would be best to see your doctor for an ekg and if needed a holter monitor.

Not likely: I'm not aware of any cardioactive drugs contained in the burning of potpourri incense. Of course, if you're in a closed room with a lot of incense burning, you're exposed to the products of combustion like carbon monoxide. There's always the possibility of allergy or your own idiosyncratic reaction (ie, unique to you), but in general, probably not.

Macrocytosis is a : Term used to describe rbc that are larger than normal. Common causes are vit b-12 and folate (folic acid) deficiency, liver disease, alcoholism, etc. With above mention diseases a rapid heart beating or abnormal heart beating can happen.

Yes: If you dehydrated or have "low fluids volume" in blood vesles - heart is increasing rate to circulate blood to vital organs and it may feel subjectivly as a "palpitation" . Whatever is the reason for dehydration - volume has to be replaced asap.
