Not really: It won't damage minerals or proteins at all. Any cooking can reduce vitamin c content some and some other vitamins to a lesser extent. Boiling vegetables in water actually loses more good stuff into the water. The 'pop' claim that microwaving renders food far less nutritious is just something that folks made up because folks are likely to believe scare stories about new technologies.
