Consider this: Gross as it sounds, if you drank 10, 000 calories of wesson oil, your carbs would be zero and your blood sugar would very high. Low glycemic load foods will not appreciably raise your hba1c if you have adequate Insulin or hypoglycmic agents on board, so carbs themselves are not the enemy. How much you eat, how well balanced it is, and what meds you take matter.
