How can viruses be used to target and treat cancer if they only bind to very specific receptors in the body?

Not in use yet: You are correct in your understanding of the virus biology. If the receptors for a given virus can be induced, selectively in cancer cells, then virus may be used in treatment. However, we do not have the skills to do that, yet.
