Gluten Good or Bad: Gluten is a protein in wheat, barley, and rye. Gluten is the culprit in Celiac Disease. Celiac Disease is the tip of the iceberg, though. The actual iceberg is non-Celiac Gluten Reactivity. There is current research at Harvard showing that consuming gluten affects zonulin, which causes increased permeability of the intestinal tract. Gluten is often a factor triggering autoimmune diseases.
