Not known for sure: I am thinking that there have not been enough studies on this issue although you use the term permanent and for the purposes of discussion is might be more illustrative to focus on long term. In that sense, the changes in lean body mass percentage and the recruitment of brown fat that is more likely in the context of anorexia would make long term changes in metabolism possible! stay safe!
