I just don't understand with needles how do you know how far deep in the skin you're suppose to go?

Depends: It depends upon the medication injected . Some require shallow entrance (subcutaneous) and others need absorption of the medication from the muscle (most vaccinations for instance). Check with your doctor for the medication you are using.
