Ovaries do not: Work till age 65 ! may still be producing some hormones in the early to mid 50s so you may get some hot flashes that can be easily treated.

Ovary removal: Yes there can be side effects as the ovaries continue to secrete several hormones even after menopause. Best to discuss with gyn endocrinologist before surgery.
