Growth spurts. do they really happen or are they just parent's observational bias?

Yes: During the newborn period baby grows ~ 10in the first yr and ~4in the 2nd & 3in/yr until puberty. At that point they may jump up to ~5in/yr for a yr or so. Timing is different from kid to kid and in boys or girls. So in truth, growth both slows down & spurts as part of normal growth & development.
