Depends: From a few hours to several days, depending on the cause. Diarrhea resulting from bacterial toxins (e.g. Staph, bacillus cereus) starts in a few hours, whereas diarrhea from salmonella, shigella and campylobacter takes longer, because the organism have to replicate first. You can never blame the last food you ate (or sue the last restaurant you ate at) for diarrhea.
