Well: Could be several  things inflammation ,rash  infection  and even herpes Zoster. See Dr. for specific diagnosis and treatment

scaley fungal infection in ear & outside on back of ears. itchy & red just behind the ears at 1st, now its been spreading deeper & deeper into scalp. & its always shed excess amounts of what looks like dead skin behind ears as well. whats this?

Needs eval: It may be a fungal infection, or eczema or psoriasis. The way you sort this out is by having a proper exam done.

Hay fevers: You likely get an acute episode of allergic rhinosinusitis or previously known as hay fever. Depending how severe your symptoms are, you might need antibiotic and antiinflammatory medications if bacterial infections occur. Please see your local allergist for evaluation.

Allergy?: Since colds are not associated with itching, I suspect that you are mistaking allergic rhinitis for a cold.

Eczema or infection: Please have your doctor take a look at your ears. You may have extremely dry skin like eczema or a yeast infection. Might want to get checked for blood sugar and thyroid too.

Otitis externa or: seborrhea. You must be examined to determine whether this is a bacterial infection or a skin inflammation. I would suggest very gentle cleaning of the crusted areas with a soapy solution of Head and Shoulders or Selsun(selenium) Shampoo ( if not allergic to these products)  applied with a Q-tip. Leave on the affected area 5-7 minutes and then rinse off with warm water and gentle soap.

Many things: Contact dermatitis, fungal infection, bacterial infection to name a few.  Best to see doctor and have this evaluated.  Need to see, feel skin conditions in order to try and make appropriate diagnosis.  Best of luck with this. Dr R

Hard to say.: If you use Q-tips stop them. Avoid all fragrances and aerosols in environment, because they are skin &amp; respiratory tract irritants (and add to the environmental allergy burden). If an antihistamine helps, then an allergy of some sort is the problem  &amp; keep a diary to see if something you are eating, or using is the problem, inc. supplements and over the counter meds. See a doc if this doesn't help

Itchy red ears: Wonder if you may have allergy to something you're exposed to at night, because allergies do get worse at night and extended exposure is typical for them. What you may be allergic to remains open. Look for potential allergens in your bedroom - pillow, bedding, mites, bed bugs, detergents, personal hygiene items to name a few.
