Many: Ibs, inflamatory bowel disease, infections, side effects of meds especially some meds like antibiotics  and some otc supplements. Just to name a few. You need labs , stool sample and probably a colonoscopy.

Need more info: Symptoms are best understood in the context of age and health history, but you don't provide that.  
Some people with symptoms like you describe should be seen by a gastro-enterologist.  They can see if there is a particular disease process going on.

VIRAL GASTROENTERITI: It seems without examining you that you may be having viral gastroenteritis, you need to make sure you drink plenty fluids to prevent dehydration and give your bowels some rest
but if it persists consult your doctor as it can be due to bacterial infection like e coli.Shigela, salmonela etc.
But fluid replacement is to prevent dehydration is the key.

I think you have: largely answered the question yourself. Your diet is the problem! One meal, late at night (inactivity after eating) and probably sweetened or caffeinated beverages.  Spread out your calories, make sure you get more fiber (veggies, fruits, healthy grains (cereal/bread/quinoa), nuts. You are presenting your intestine a challenge with your current pattern and too much has to go through too fast!

Give them: clear liquids for 24 hours then if doing better advance diet to bananas, rice and toast for another 24-48 hrs then back to a normal diet.  if it worsens or a fever begins contact their physician

Fruit juice is full of natural sugar, and thus is unhealthy beyond the first 4 ounces or so. Sugars and other things in fruit juices can make some people go poop. That is why we use fruit juice to treat constipation sometimes... but juice overuse can lead to other things, like diabetes.

Colitis: This may be irritable bowel syndrome,gluten intolerance or intestinal infection. A stool sample should be sent for culture for pathogens as well as ova and parasites. An antispasmodic medication like bentyl (dicyclomine) can be prescribed .before meals if you have irritable bowel syndrome. A gastroenterologist is best qualified to evaluate and treat you if symptoms persist.
