Really healthy: Everything you describe is fine in all amounts except the pasta so if you go slow on that you will be eating really well.

Pasta: It is a good start. You might also start swapping some of the pasta for the veggies and chicken rather than just adding.  You can also switch to a low carb pasta.

Bad Things Man: Bad diarrhea, abdominal pain and cramping, bloatedness with abdominal distension and mouth ulcers may be present. As the bowel becomes more damaged, a degree of lactose intolerance may develop, eventually you develop malabsorption which causes multiple medical conditions due to lack of being able to absorb the nutrients effectively.

Unhealthy; change!: White rice ; pasta are starches which give energy but are relatively devoid of vitamins, minerals ; phytonutrients. This diet ireases risk of obesity, diabetes, heart disease and cancer. The best thing to do is to eat more vegetables and fruits and reduce your intake of rice ; pasta. Brown rice has more nutrients than white rice.

Check your glucose: Type I  Diabetic needs careful monitoring of all foods, drinks and physical activity. Schedule an appointment with your Doctor as well as diabetic educator and or nutritionist. Bring in a detailed Blood Glucose Log with everything you are ingesting .You may need to do some adjusting of your diet and Insulin and physical activity.

Exercise and Meds: Reduce your intake of saturated fats, replace it with unsaturated oils like olive oil. Start exercising, gently first and gradually increase the intensity. Based on your family history and other risk factors it may be prudent to consult your doctor about taking statins.

Very likely to be OK and you can relax.
If you are found to have diabetes the management is worrying as you start but gets under control fairly quickly.
