Sound doesn't matter: Joints will often make popping or cracking sounds. This doesn't indicate any danger or negative. The things to watch for is pain or swelling. If these happen then you should see a doctor.  
No studies have found a need for supplementation, especially in healthy young adults.

Please clarify: There is not much fat in hands, normally. If you are overweight then your hands will have proportionately more fat and to reduce that you will have to address the general weight/obesity.
