Seriously sick: You have bacterial endocarditis until proved otherwise. If it was TB instead, I woudn't be surprised. Or any of several other entities that are all serious but manageable. Get with a competent physician who can proceed with a proper workup without delay.

Staying hydrated: You probably began your experiment dehydrated. There are of course "insensible losses" or volume losses that can't be measured-- mostly this is from the humidified breath. That can amount to 0.5 L right there. You also lose water in the stool... You could account for that. Try the experiment when your urine is clear- when you are not mildly dehydrated. I think you will get better results.

RICE ALLERGY: Child's sx are due to allergy. Never heard of rice allergy. Avoid rice for several days and then reintroduce it. If the same problem occurs, then he is really allergic to rice.

Hormonal changes: If your weight loss was rapid then you are likely decreasing your amount of circulating Estrogen. Fat cells secrete Estrogen. Losing the fat decreases the Estrogen. Consider getting your thyroid and blood sugar checked too. Congrats on the weight loss. Keep up the good work.

A healthy baby will: Drink water if thirsty. The beauty of breast-ferding is that it is sufficient for hydration in countries whose water supply may be contaminated. His pediatrician will look for medical causes of proteinuria. Urate crystals can be seen in the diapers of healthy breast-fed babies. If your baby is dehydrated from sweating ; is not gaining weight appropriately,  his doctor may test for cystic fibrosis.

GB function test: I'd suggest a hida scan w cck injection. You may not have gallstones but you could have a poorly functioning gallbladder. If your ejection fraction is lower than 36% then you need to consider cholecystectomy. In the meantime, eat a low fat diet. Good luck.

Whey Protein: Whey protein powder is freely available for athletes.  Lean protein such as chicken, turkey, and fish are all good sources of protein.  Eggs in particular are good - especially egg whites.  
If you are vegetarian, most green vegetables, and beans, grains etc contain all the essential amino acids, and are actually more bioavailable than Amino Acids from animal proteins.
