Too much salt: Likely too much salt with your holiday meals! Drink water to flush the salt our of your system. If fails to improve, could be a heart or kidney problem and you need to see your primary care doctor .

does not sound like related to sugars.  With type 1 diabetes (not supposed to say "diabetic" any more) other autoimmune diseases are more common.  A possiblity would be rheumatoid arthritis.  Should have a medical exam and appropriate testing (including specific blood tests). If RA , effective disease modifying therapies available from rheumatologist.  Always ready to talk about diabetes.

Swelling: I would let your provider know and it would be a good idea for you to be seen.  I do not know what your BP has been running, however, if this is elevated from your known along with the swelling this would be concerning.
