Aphthous ulcer: most likely an aphthous ulcer which can be recurrent but typically benign. these are different from the very painful external lesions on the lips caused by herpes virus.

aphthous ulcers are benign and not contagious. look at the above image to compare to yours.

Granulation tissue: Granulation tissue forms as part of the healing process.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.

STOP SMOKING!: First, yes, stop smoking! smoking causes cancer, and its incidence is on the rise. You should stop smoking regardless of whether or not it caused or is contributing to the ulcer. Take this as a wakeup call to stop. Then make sure you see a dentist (or physician) to accurately diagnose the ulcer. Any lesion that lasts two weeks or more needs to be diagnosed.

Canker sores: Saline rinses, ibuprofen for pain, topical anesthetic like anbesol or orajel helps.

is it possible to get stomach ulcers from chewing gum?

Not really: In theory at least this can be bad, as excess acid secretion in combination with pockets of damage to the stomach lining may lead to an ulcer.

N fact as long as the gum is sugar free (and particularly if it contains xylitol) it is actually good for the teeth and can prevent dental cavities.

However some moderation is necessary whichever type of gum he is eating. I'd suggest you limit him to thre.

If you have ulcers/pain/permanent discomfort you have a significant problem and need to see a Periodontist immediately. Your General Dentist can make recommendations, or you can call the local Dental Society for a list of Periodontists.

Probably not: But possibly yes. Chances are very small, but not non-existent, that it is serious. Your Dentist will be able to examine the lesion and determine its severity. What may be helpful would be to put a millimeter ruler up next to the lesion and take a close-up selfie of the lesion every day between now and your appointment. Then show the series to your 
Dentist.
