Headache: Can be something less serious like tension headaches/migraine (especially if had since younger) or could particularly in your age bracket be something more serious such as giant cell arteritis or even some issue/lesion in the brain.  Needs an urgent doctor examination and may need tests such as bloods (ESR, CRP) and maybe even brain imaging done.  All the best.

Probably IS bone: Could be many things, but it is very common to find a bony "torus" on the inside of the lower jaw bone, the outside of the upper jaw and the midline of the palate. Have your dentist verify it--just in case. They can grow quite large and often are injured by food with "edges" (chips, bacon, toast) because the overlying gum tissue is thin and fragile.

Try some water: It may still be stuck either in the back of your throat or esophagus. Try some water which will help to wash it down.

Gingivitis: There is no "quick fix" to "healing" your gums.  The first thing that you should do is contact a qualified dds for a thorough evaluation to diagnose your problem.  Gingivitis is inflammation of the gums that can be treated with proper oral hygiene, tooth brushing, flossing and antibacterial/antiseptic rinses.  If your problem is more severe, your dentist may refer you to a periodontist. Do it now!

those are subjective opinions but it's worth a read. Be sure to visit your dentist if your gums show any signs of disease or lack of growth.

why can't people like me with tmj chew gum?

Very Obvious...: Tmj is directly related to the forces that are applied to the articulation (TMJ)  and they suffer the pressure of such forces (that may be up to more than a hundred pounds). If you have TMJ problems, you don't want to abuse this area that is already hurt. It would be like  forcing a door which hinges are  broken.
