could tell that my dentist only left a small stub of my tooth left, is that normal?

Yes: If you were having a cavity filled or a crown done, then yes, it is normal to feel like there is just a small stub left.  Often what feels small to your tongue is still more than adequate to retain a crown, and if your tooth had a cavity, the cavity may have decayed a large portion of the tooth in which case the dentist has no choice but to remove all the decay.

Surgery: If the tooth is broken off below the gum line and bone level, then usually surgery is needed.  The surgeon usually makes an incision with a scapel to expose the site to improve access and visual field.  Then instruments can be used to help move or a surgical bur may be used to remove or section tooth to gain access and remove the tooth. The site is sutured back and recovery is usually fairly quick.

Needs to be redone: If there is decay present then the filling needs to be redone.  The decay shoul be removed.

Recession: if you look in the mirror has the gum recessed down the tooth. (Showing the root, a yellow color of the tooth). This is usually recession and can be caused be grinding, brushing the gums too hard and therefore causing sensitivity to hot and cold. If that's not the cause, have you traumatized the tooth ie. Hit it on a bottle or something hard.? May times these do not show up in X-rays.

Yes- many options: I'm not completely clear on what was done and what your question is- "spaces for one top tooth removed? You can't continue treatment with that dentist or with any dentist? Why not?  There are many methods to replace the tooth, both on a temporary and permanent basis.  You will need to see a dentist to discuss your options- types of replacements\costs\pros & cons\ timeframes, etc.
