Change your mind: If cholecystitis is the confirmed diagnosis, and no other, your best option is lap cholecystectomy
you can wait, diet,  treat the pain , take antibiotics with acute spells and IV fluids etc.But likely your time for operation will come.

GB sludge: The higher the fat content, the more sludge...thickened bile acids you’ll have. Not quite gallstones yet but on their way to form stones. Look at the fat in your diet. Make your fat count. Impossible to eliminate fat from diet..this is unhealthy to do. Focus on a balanced low carb Mediterranean diet..has good fat like monounsaturated fat.

When you eat, various stimuli including cck release stimulate gallbladder contaction, and the concentrated bile is then emptied into the small intestine to mix with food.

Pain and nausea: Upper abdominal pressure discomfort with gas and bloated feeling after eating, may get upper abdominal pain and nausea, sometimes vomiting. Worse after eating some fatty or greasy foods. Pain can go into the right upper abdomen.

The risks of not having surgery are the possibilities of worsening symptoms, infection and gangrene of the gallbladder.

Not much: Sometimes after people have their gallbladder removed they can have loose stools after eating fatty foods.  This can occur in about 40% of people.  It usually gets better in a few weeks after surgery.
