What's UR threshold?: Either: 1) you have lactose intolerance but didn't take enough lactase enzyme; or 2) you are intolerant to another component of cheese.  Of course, you can give up eating cheese to avoid diarrhea OR you can get tested OR you can determine how much cheese you can tolerate before diarrhea develops (by slowly increasing consumption &amp; gauging response).

Hydrate: Its never a good idea to take a medication to bind loose stool if it is due to some infectious agent, In general this will subside in a few days in the mean time drink plenty of fluids to maintain hydration. Avoid caffeine it makes you urinate more and we want you to retain the fluids.

Not likely: lactose is the milk sugar that is digested in the small intestine. This would be very slow transport through your digestive tract to take 24 hours. Diarrhea should have occurred sooner. Dehydration does not cause diarrhea.

Can you substitute other foods? Or consider reduced lactose products. Or OTC lactase eg Lactaid &amp; Surelac (http://www.drugs.com/cdi/lactase.html). See doc if no better.

Likely: Post inflammatory IBS with symptoms that may last indefinitely which is otherwise poorly understood. It seems that in your case it recurs with heavy fatty loads, overlapping symptoms common in gallbladder dysfunction and pancreatic insufficiency.  Would suggest reducing at a minimum, specifically fatty intake in trying to find a threshold in the amount that will still be tolerated OK.

Likely: If the symptoms go away when dairy is removed from the diet, and return when restarted then lactose intolerance is likely.  It often manifests in later years.

since march of last year i've had this happen on 4 separate occasions. i get sulfur tasting burps which lead to diarrhea and vomiting for a few hours and then i'm good. all 4 times this happened it came after eating food with cheese in it. any ideas?

Intolerance: Apparently you are intolerant of cheese and this may be a form of lactose intolerance. Do you experience bloating,cramps or diarrhea after ingesting other lactose products like milk, ice cream? If so you can combat this by taking lactaid prior to eating lactose products.
