Family Doctor: I will have to assume you were the person doing the oral sex on another partner. You did not share the gender of yourself or your partner.  There are different risks depending upon these vital parts of the story. But, in general there are no STDs that cause a sore throat three days after sex.

Probably not an STD: One day is too soon for an STD or any other infection to cause symptoms, and most oral/throat STDs don't cause sore throat anyway. This is pretty common after oral sex. Maybe minor trauma if the exposure was vigorous and deep, but for the most part the cause is unknown and should clear up in a day or two. If not, see a doctor. You know it's silly to avoid testing for fear of the result!

Usually no symptoms: Oral gonorrhea almost always (95% of the time)  is asymptomatic, with no sore throat at all. On the infrequent occasions it causes symptoms, they would not come and go. Also, cunnilingus -- oral-vaginal contact -- rarely transmits gonorrhea or other STDs. Most likely your symptoms are not from any infection from that exposure. But see a doctor if symptoms continue or you remain concerned.

Probably not: it would be rare for HIV to cause symptoms so quickly after transmission, and symptoms are more likely related to a cold or respiratory virus.  However, it would be a good idea to be tested for studs regularly if having unprotected sex

Many Ways: Mouth breathing during sleep, post nasal drip, a bacteria like strep, a viral infection of throat, exposure to irritant,  i could go on an on.
