Related to POTS: It is a test of  autonomic nerve function.  Because of  low blood pressure  the circulation to the nerves is faulty and the nerves that control sweat are not working.  
Eating 6 small meals a  day, avoiding, alcohol, and high carbohydrate meals,  eating  your water by eating vegetables through the day every 3 hours, and exercising, while lying down if necessary  can be helpful.

Unknown.: I am not aware of any CDC or other guidelines the evaluate these conditions for COVID risk. However generally anybody who is frail elderly or has multiple medical problems is increased risk for Covid complications or severe disease.

Initially, yes: If POTS is due to dehydration, or if dehydration is contributing to blood pressure instability, then IV saline is a good starting point. However, if symptoms persist despite adequate (re-)hydration, then you have to look to medications - Florinef, (fludrocortisone) Midodrine - and other interventions (compression hose - it's actually the most effective in controlling POTS symptoms but people don't like to wear them

Could be!: Pots or postural orthostatic tachycardia syndrome happens when heart rate increases by more than 30 beats per min by changing from sitting to standing position. The same mechanist that causes above symptoms can trigger sweating when you are consuming food. I suggest drinking two glasses of water before meals to avoid symptoms. Also get thyroid function tests to rule out other possibilities.
