Immune booster : In order to boost the immune system, I recommend a low inflammatory diet. Avoid sugar, alcohol, high animal fats. 
In addition, I recommend eating lean proteins fish, egg whites, lentils, beans. (small portions each meal) . Drink extra water. eat fresh fruits and vegetables. Manage stress, exercise,  sleep well.   High vitamin d levels in the body are helpful for COVID-19

Motivate them: Its very hard to change someone's behaviour unless they want to.  However i think having a positive influence, showing them how healthy food can be yummy, exercise can be fun or just moving around can be may motivate them to make a change.  Also emphasizing their improved quality of life.  Berating someone or negative talk most likely will not lead to any real change. They have heard it before.

Super obese: It depends on so many things. How heavy they were, how much weight they lose, what medical problems they had, how severe they were, etc. However, no matter how you look at it, the super obese individual that loses a significant amount of weight will be much healthier and have a lower risk of death than if they stayed super obese.
