Not practical: Sorry the stent did not help.

Yes, it's "possible" to remove but would probably require major open surgery, w risks bleeding or thrombosis of artery. In short, unless the stent itself causes real issues (unlikely), risks of removal likely to be significantly greater than risk of leaving it there. If looks good on monitoring for a time, frequency of this can probably be reduced. Hope this helps!

Regardless, you can ask if some topical anesthetic gel (xylocaine/urojet) can be placed in your urethra first, before the stent is extracted.

Not removed: Very unusual to remove stents unless infected (rare). They may be redilated or a surgical bypass may be needed.

Seek care ASAP: You don't say what kind of stent or where it was placed.  I assume that it was used to provide flow of blood , urine or other fluid  in an area that was blocked. If you have pain once it is removed you may have a recurrence of your original problem.  Seek care immediately.

Stent: A ureteral stent should be removed or exchanged every three to six months. There could be encrustation or breakage of the stent if it has been in for two years.

Stents: The spasms associated with ureteral stent removal are most often due to ureteral spasm.  This is very similar to the colic pain produced by a stone passing. They usually subside within 24 hours.  If not, it may be that a stone fragment remains in the ureter and needs attention.  The drug ketorolac taken orally or intranasal, can be quite effective in controling ureteral colic at home.

Likely normal: It's not uncommon to have ureteral discomfort for a few days after removal of a stent.  If you had lithotripsy, there may however be more stones working down the ureter

No not really: Ureteral stents can be uncomfortable. Removing them in the office is usually not painful.

Pyeloplasty?: Pyeloplasty is a reconstructive procedure of the drainage system of the kidney.  If your doctor did not restrict you from drinking alcohol, the two bottles of beer already consumed should not be at issue 3 weeks later.

It's safe : The stent likely went down through the bile ducts into the small intestine(duodenum ) and flushed out along with your stools in the colon. Don't worry, be happy!
