Metabolic Acidosis: In medicine, metabolic acidosis is a condition that occurs when the body produces too much acid or when the kidneys are not removing enough acid from the body. If unchecked, metabolic acidosis leads to acidemia, i.e., blood ph is low (less than 7.35) due to increased production of hydrogen by the body or the inability of the body to form bicarbonate (sodium bicarbonate) (hco3-) in the kidney.

No: Probably not unless you have kidney disease, heart disease or liver disease. Due to the amount of sodium in this regimen, i would not recommend it long term.

Kidneys compensate: Your body tries to buffer the increased carbon dioxide from chronic respiratory acidosis by increasing the bicarbonate (sodium bicarbonate) absorption from the kidneys to keep the body's pH near 7.4.

Acute Gout: Sodium bicarbonate, (sodium bicarbonate) once it enters the stomach, turns into water and a carbon dioxide gas. The pH of blood is unaffected. Therefore, it has no realistic role as a treatment for gout!  There are many effective strategies for acute gouty arthritis. See your rheumatologist.

Serum bicarbonate (sodium bicarbonate): Bicarbonate (sodium bicarbonate) in our blood acts as an essentisl acid buffer. Its concentration is tightly governed and regulated between 22 and 28 meq/liter.  A value of 32 indicates an excess.  Why it is 32 is important.  The kidney is responsible, for sure, though the kidney need not act alone.  Hormone signals such as aldosterone excess can drive this change.  Lung retention of carbon dioxide also can.  Ask doc.

why would hco3 or sodium bicarbonate be elevated in a persons labs if they have gout?

They shouldn't: Gout occurs when uric acid is produced often in an acidic environment.  Hco3 can be used as a buffer when added to water creating  more alkalinity in the blood, preventing uric acid deposition in the joints.  Perhaps your bodywork was performed after trying this treatment?  Using hco3 can dangerously raise your bloodpressure, so be careful.

Bicarb wrong choice: There are lots of reasons for abdominal bloating &amp; many are not due to the GI tract. Bowel "problems" often accompany GI disorders--whether functional or "organic." If pain with meals consider peptic (acid), biliary, pancreatic disease, maldigestion/
malabsorption, sibo. If bleeding or tenderness is present, this suggests inflammation, ischemia, or infection &amp; certainly warrants evaluation.

Uncommon: Bicarbonate in intravenous infusion is uncommon and may be used infrequently to correct acid-base balance in metabolic disorders.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex.
