No effect: Except with extremes of deprivation as in starvation or some third world conditions, there are no dietary things that can alter vision negative or positive.  There is a dietary supplement  useful in the elderly related to macular degeneration but you are way too young to be concerned about that.

Many: There are several food ingredients that reduce the risk of eye disease.  This includes lutein and zeaxanthin which is found in dark green leafy vegetables, like kale and spinach; fish oil; flax-seed oil, anti-oxidant vitamins (vit a, c, e and zinc).

Maybe: We need to separate prevention from treatment.  Supplements such as areds vitamins for macular degeneration have proven to be useful.  For prevention, the observed effects are smaller so it is much more difficult to see benefit.  A multivitamin can be helpful with extra antioxidants.  We just don't want to cause harm.  Check with your eye doctor and better still, just live "healthy.".

Unlikely: While anyone with fragile eyes (recent surgery for instance) should stay off roller coasters, most who can withstand this activity will not endanger their eyes.

Nothing specific: Eye health goes along with maintainence of general health of the body.  If you have an adequate diet you do not need to supplement for the eyes specifically.  The eyes will take from your circulation what they need.  Some will tell you that vitamin a is helpful but deficiency of this vitamin in first world countries is really rare.

It is possible: It depends on how severe the sinusitis is.  In some patients untreated sinusitis will lead to eye complications: double vision, severe eye infections, and even blindness.  These orbital complications of sinusitis will require both medical and surgical intervention.  One should  see an ENT doctor as the initial step and depending on the exam, the ENT may need to consult with an ophthalmologist.

Many: There are many vitamin supplements for eye health. Most contain a wide variety of vitamins, including anti-oxidant vitamins like lutein. There is no dependable information that one brand is significantly better than another. Commonly used vitamins include centrum silver, ocuvite, and numerous others. These are probably most useful if you have early macular degeneration, or if it runs in the family.

Get checked out: Although reversible loss of night vision may be associated with vitamin a deficiency, this is not likely in developed countries with normal diet.  How long have you had poor night vision?  Do you have congenital hearing loss?  Loss of night vision may more likely be secondary to a variety of retinal dystrophies, including, most notably, retinitis pigmentosa (rp).  When associated with congenital hearing loss, rp is part of usher’s syndrome.  Symptoms are progressive nyctalopia (night vision loss) and constriction of visual fields (ie: inability to see immediate surroundings like stair rails or peripheral traffic when gazing forward).  Other conditions may cause similar symptoms but are less common. Diagnosis is made by ophthalmologic examination including ophthalmoscopy, erg and visual field testing.  Cataracts may occur and further impair vision.  Unfortunately, there is presently no recommended therapy to arrest or cure these conditions but research is being conducted into the effects of neuroprotective agents as well as surgical remedies with stem cell and retinal pigment epithelial replacement.  Please have your eyes dilated and examined.
