Yes angioedema (swelling of loose tissues) can happen without redness or itching, although rare as an isolated allergic drug reaction, and sometimes difficult to tell if it is a true allergic reaction vs a side effect ( which can abate, or wouldn't be harmful to continue despite being present). It can: Incomplete antibiotic courses are known to cause resistance of bacteria to the antibiotic. Doxycycline is a bacteriostatic antibiotic, meaning that it typically suppresses bacteria more so than killing them would probably be more prone to that than other antibiotics. Also, it depends on the bacterial propensity to develop resistance as some do so more than others.

Take Benadryl (diphenhydramine): For 1-2 weeks, at least twice a day.  Sometimes an allergy to Bactrim (sulfamethoxazole and trimethoprim) can become severe.  If you develop blisters, red eyes, red lips, then you need to be seen and might need steroids.  The Doxycycline is probably not responsible for the worsening.  Allergic rashes can become worse even after you stopped the bactrim (sulfamethoxazole and trimethoprim).  Good luck.

Not uncommon: Doxycycline should be taken with food to avoid this common side effects. If you still have GI problem you will need to find a substitute.  By the way, the proper term is sulfa allergy not sulfate (which is not known to be allergenic) but this or IBS has nothing to do with your doxy side effect.
