Junk : Not all carbohydrates are the same - but many in western diets are "junk". They have been stripped of their fiber and nutrients. Eating a high carbohydrate diet tends to lead to the problems of obesity and its ills: diabetes, high blood pressure, heart disease, etc. A well-balanced diet is half your plate of veggies and fruit, then complex carbs and some protein. And don't forget the "good" fats.

Confused question: No toxicity from water soluble vitamins. Toxicity from fat-soluble vitamins. Toxicity from calcium.

Why bother: Calcium is readily available in milk, soy milk, some orange juices, cheeses, etc. The equivalent of 4 slices of cheese or cups of milk fill their need. There is no need for a 21mo to be on a formula. If you like the idea, Carnation makes a breakfast product called "Essentials"  in packets. (add to milk) It comes in flavors &amp; provides a similar blend as ensure for a fraction of the cost.

Depends blood test: Avoid salt substitute and potassium supplements. if routine blood test shows elevated potassium level you avoid certain foods with high potassium such as bananas to bring the potassium level down.

Common K sources are citrus fruits and potatoes.
