Apple: Eat an early supper- well before bedtime.  Do not eat an overly large meal.  Consume a moderate amount of fluids with your meal.  Eat a medium apple for desert with dinner as desert.

? Bad food?: At your age most common would be either something you ate didn't agree with you. Or a bladder-urine infection. Stay on liquid or light diet for 2 days, if not better see a doctor and least have your urine checked. You may also use Prevacid or zantac (ranitidine).

Pregnancy: certainly can present with the symptoms you describe.  Over the counter pregnancy tests can be purchased at most drug stores.  Check one out if it is possible you are pregnant.

Endosscopy?: Anemia in a 27 year old female can be from a gyn source, but the ulcerative colitis, or inflammation i the esophagus from gerd could also contribute. Upper and lower endoscopy can help determine the extent of damage from gerd and the activity level of colitis. You should decide with your primary care provider and/or GI doc whether or not to have upper-lower endoscopy.

2)  Routine GERDs (reflux)
3)  Gastritis or ulcer
4)  Partial bowel obstruction

Less likely other issues.

You will need a work-up if not gone in 1 week.

Apple Cider vinegar: Hi, do you mean Apple Cider Vinegar? if that so then that would make you worse, any acidic food would make GERD worse, watch ur diet, avoid acidic food, spicy food, caffeinated drink, chocolate, greasy food, alcohol and if not better see your MD.
