I : I agree with you that it sounds like you are doing a very good job overall.  I am glad that you are so active and can do your own yard work, and feel well.

I am concerned that you are so anemic.  A hematocrit of 30.2 is very low.  It needs to be determined if that has been worked up, and if that is a stable hematocrit for you.

Your a1c sounds like it has been improving but htat is stll quite high.

I agree with you that portion control can be very helpful, and it sounds like you are quite active so that will also help you.

Fiber: YOu want to slow the absorption of carbs. Fast carbs (sugar/candy/soda/sauces) are the worst. Starches are intermediate and hard/packaged carbs that are hard to digest are quite good. Examples are beans, oatmeal, whole kernal grains.

45-60 gm per meal: The less carbs consumed daily, the better! but the problem is you will not be able to maintain that diet for ever, and because of that 45-60 gm of carbohydrate (3-4 carb choices) per meal is a more reasonable alternative, doing that typically reduces the extreme spikes in the blood glucose.

1-ask your dr for advice on this, 
2-in general carbs need to be controlled and carefully quantified in a coordinated manner with the treating dr, and : 
3-complex, natural carbs (eg from fruits) are much better than refined (commercial sugar, pasta, common flour etc).

Depends: In general, the less carb you take , the better off you are with diabetes. But a life totally without carb can be an unpleasant one.   As to how much, it would depend on your lifestyle (how much exercise etc) and severity of your condition and thus you need to consult a dietitian re. your diet.

Exercise + wt. loss: It appears you have a degree of Insulin resistance. If you are overweight, even mild to moderate weight loss will make you more Insulin sensitive and help your diabetes control. Also regular exercise will help increase Insulin sensitivity.
By the way avoiding all refined foods and eating a generous amount of vegetables will help as well.

Carbs is fuel: Even if you have diabetes your body needs carbohydrates for energy.  A diabetic type 2, hasbto have at least 30 %!of his diet  to be carbo.
