Probably safe: Once open sores are gone, infectiousness is markedly reduced; continued discoloration makes no difference. Herpes is sometimes transmitted in absence of visible sores, but quite rare with genital HSV1 (unlike HSV2). Your partner can have a blood test to see if s/he already has HSV1, as do half of all adults in the US. If so, s/he is immune to new HSV1 and will never catch it from you.
