Immune injury: Your father had an immune reaction to one or more of the proteins in gluten.This is commonly found in wheat/rye/barley. His body developed antibodies to this protein & these mistakenly attack the intestine where it is digested. The attack injures the tissue and leads to a variety of symptoms/complications. Any future exposure to gluten can trigger new antibodies/injury.Avoidance can help it heal.
